MY PERSONAL ITALIAN RECIPES

Italian Cuisine is famous worldwide and we have fantastic food.
Each Italian region has typical dishes and it’s incredible how many different fantastic specialities you can taste in a small country like Italy.
Here I put just a few of my recipes, It’s just a little piece of my family’s tradition, I would need 100pages to write them all !
I cook almost everything, from starters to cakes and desserts, I also like international cuisine and I’ve learned how to make sushi or other not-Italian dishes I like.
I started cooking at age of 8 helping my mum and at 12 I was already cooking by myself. It’s very relaxing for me and I love it.
Most of all I enjoy cooking for friends.
Some of my recipes are personalized but they are based on Neapolitan and south Italian influence.
I hope you will enjoy them and I hope my English translation makes sense !
-In Italy Pasta it’s a main course. It is not a side. No one would just boil pasta and put it as side.
-How do you cook pasta?
You have to put on heat a big pot ,¾ filled of water, with some salt (taste the water to be sure it’s ok).
WHEN water starts boiling you add the pasta (NEVER before) and you cook it following the package instruction and/or tasting it.
-Time cooking for Pasta is also very important. The longer is the cooking-time the better is the quality of the pasta. Pasta MUST be AL DENTE.
-The sauce is very important and the way you add it to pasta is crucial.
-If you do it the wrong way you can ruin everything.
-In my family we never buy ready-sauce (it’s forbidden!!)
-Usually we cook with garlic OR onion (rarely both in the same recipe). The same is for basil OR parsley
-South Italian cuisine most common herbs and spices are : basil, parsley, rosemary, sage, onion, garlic, oregano, pepper, chili pepper (peperoncino), chives, mint. They are all used consciously.
You can’t just put them all together in every meal. That’s why if I eat an Eggplant Parmigiana in NY and they put oregano and or parsley it tastes not right. You need basil.
When possible use them fresh and not dry. Better if Organic.
-In my family we use extra virgin olive oil for cooking almost everything. Mediterranean diet is great and we use butter (or veg-butter) just for desserts.
You can replace cheese with veg-cheese in all my recipes.
